Just a big spinach salad. Yeah, I'm sick of them. But I've been slacking all summer, and I've put on about 7 lbs, so it's time to get things back in order. Plus, I was on vacation last week, and I ate out 8 nights in a row, so it's time, baby...

I just made possibly the best thing I've ever made! Smoked salmon with creamy dill sauce, and creamed spinach on the side.
I put the salmon fillet in aluminum foil this morning, and put a rub on it, then put some liquid smoke in the foil, and left it in the fridge all day. I got home from work, and started a charcoal fire, with a pack of wet mesquite chips on top of it. Put the salmon foil pack on top, and let it cook/smoke for about 30 minutes. HEAVENLY! Seriously, I love to cook, but this is probably the tastiest, most restaurant quality dish, I've ever made! I can't wait to do it again!

I am quietly enjoying a Paul Newman's spinach pizza. Husband is at work and kid is with her grandparents at the beach.

I shall be having a slice of Baklava that I made this morning before getting buried in work for the evening.

Spinach tortellini with basil pine nut pesto, green beans w/slivered almonds and italian bread. Also a nice Cab wine.

Lemon pepper pollock fillets, with a half an ear of corn on the cob, and a spinach salad, with egg, red onions, tomatoes, and a mix of bleu cheese dressing, and raspberry walnut vinaigrette(they compliment each other very well).

I wouldn't be too jealous. Cereal is what's usually on the menu for me, being a lowly student with little time on her hands lol. I was dead sophisticated tonight and upped the stakes to a Tofurkey and Facon sandwhich

Honestly, I just LOVE to cook. Love it! And after I lost the weight, I think I became an even better cook. Because before, I'd just cook a big pan of CRAP(tasty crap, but definitely crap that wasn't good for you). Now, I've learned how to make things that are good for you. How to make a fish fillet, without frying it. How to spice up veggies, where they're not boring. Divorcing red meat and bread(95% of the time, anyway), was the best decision I ever made.

As much as I complain, I do love a good cereal dinner
Ooh, vegetarian meat huh!? Interesting, never tried that.

I should probably learn to cook one day, can't see it happening anytime soon though, I will just have to read all of your fabulous dinners and imagine them for myself, Bread and Cereal are my bestfriends, I couldn't live without them !

I love bread, and to be honest, I miss it waaaaaay more than the red meat.

Yep. I'm a strict Veggie. Once you get used to eating "meat replacement" meat, you don't miss the real stuff. At least in my experience.

Scrambled eggs, with turkey bacon. The scrambled eggs were drownding in a sea of ketchup.
