Yuummmm! I love me some eggs! I'll take 'em any way you make 'em...scrambled, poached, sunny-side up or down, hard boiled, in a salad. Just don't get the shell on 'em. I will literally puke if I eat an egg and I crunch on a shell. Seriously. It goes back to my early childhood and first eating eggs. I will throw up.

But if they are fine...eggs are good. I usually keep hard boiled in the fridge because it's a great protein boost and great if you're hungry at night, but don't want to pig. There is a Food Network host whom I adore. Her name is Ina Garten, and she has a show "Barefoot Contessa", which is the name of her famous East Hampton store. I worship her show and her books. She does a dish from France - Herb Eggs - that looks like it will knock the very socks off your feet. SOOOOO delish-looking. I must make them soon. In fact, here they are! (I have to buy a gratin bowl.)

I can't believe I forgot all about hard boiled eggs! My weird thing with those is that I will NOT eat the yolk. I hate the consistency for some reason. White only if it's boiled.

As long as the whites are cooked, I really don't care. Poached, fried (over easy, sunny-side up), scrambled, whipped into an omelette, soft boiled, hard boiled, doesn't matter.

Yum I love eggs but I like them scrambled with either swiss or cheddar cheese mixed in depending on my mood. Without cheese is fine to but definitely scrambled with lots of salt.

Growing up my mom would make me scrambled eggs sandwiches. It was scrambled eggs with salt and pepper on white toast with mayonnaise. Sooooo delicious. My mom is an amazing cook even for something as simple as that. I haven't had eggs in ages, I usually only have them when I go to breakfast places which is rare.

Oh I love omelets too but only with cheese. I don't need all the other junk inside.

I always thought they were unfertilized eggs that we eat?? Unless somewhere along the line I heard it incorrectly. I do remember my mother told me once if you see a red spot in the egg, it meant it was going to be a rooster/male. But that could be just old wives tales. I don't know. Somewhere I heard they are unfertilized eggs that the chickens keep laying and those are the ones we eat. ???? Anyone know for sure?

LOVE MIGAS: Eggs scrambled in spicy LOVE butter (fresh garlic- serrano) with tomato, onion, bell pepper, tortilla chips and jack cheese. Served with black beans.

I love eggs. I hard-boiled one last night and left it in the fridge so I can use it when I go home for lunch in a minute and make tuna salad...

I like 'em sunny side up, with toast. I like 'em over easy and well done in sammiches. I make omelettes and breakfast tacos a lot at home. Must have them with Cholula sauce, no ketchup, ever. I like to indulge in Eggs Benedict when I'm on vacation, too much of a pain to make myself...

I like Ina Garten too. I'll have to look up that recipe sometime.


I never had the bird's nest thing, but I do remember hearing about it and seeing it. But my mother never made it. I'll have to try it sometime.

That might be enough right there to turn me off Although, I used to hear that too. My mom never liked eggs, she used to say "I just can't eat something that comes out of a bird's ass"

It's a fallacy as are most ridiculous comments made to sound as facts.

Anyway, here's the deal with red spots on eggs:

Blood Spots
Also called meat spots. Occasionally found on an egg yolk. Contrary to popular opinion, these tiny spots do not indicate a fertilized egg. Rather, they are caused by the rupture of a blood vessel on the yolk surface during formation of the egg or by a similar accident in the wall of the oviduct. Less than 1% of all eggs produced have blood spots.

Mass candling methods reveal most eggs with blood spots and those eggs are removed but, even with electronic spotters, it is impossible to catch all of them. As an egg ages, the yolk takes up water from the albumen to dilute the blood spot so, in actuality, a blood spot indicates that the egg is fresh. Both chemically and nutritionally, these eggs are fit to eat. The spot can be removed with the tip of a knife, if you wish.


EDIT:
And you can certainly eat a fertile egg:

Fertile Eggs
Eggs which can be incubated and developed into chicks. Fertile eggs are not more nutritious than nonfertile eggs, do not keep as well as nonfertile eggs and are more expensive to produce. Fertile eggs may contain a small amount of male hormone, but there are no known advantages.
