Great topic!
In recent memory Firefly and Wonderfalls were wonderful shows cancelled even before a full season. Two coming-of-age shows cancelled before they should have been are The Wonder Years (it still bugs me that they got canned one year before the planned finish), and Freaks and Geeks. Not sure if Family Guy counts since it's coming back in May, but that and Futurama were great shows cancelled too soon. I also second Twin Peaks and Millenium but I haven't ever seen American Gothic.
