We would go shopping all day, have lunch, and then take a hike up to Enchanted Rock (here in Austin) and take in the beautiful scenery whereupon she would feel compelled to tell me her life story skipping no details.

I guess that's really more my birthday wish! It's hard not to be selfish in this scenario!

I'd take to her Saks and get her some new threads. Then I'd take her to get a faux tan (I'd get one, too). After that we'd slide on down to Spago for a tasty treat (no carbs, of course), only to end the day by jamming on the beach with a guitar and writing a song together.
