I imagine Italians having a reasonably healthy diet, we generally think in the UK that the Mediterranean diet is better than ours. I love to go on holiday to Greece as I love the fresh fruit, feta cheese, fish, olives etc. I watched a program about an old Italian couple that had some land and they were almost totally self sufficient making their own olive oil, wine and even pasta - they looked very healthy and happy.
It's true, generally we countries that live in the Mediterranean basin are luckier, it's easier to eat healty when there are opportunities and means to expand on agriculture.

And yes, those things above are abominations, especially that "Parmagiana" that for me it's almost insulting. When I see in TV programs those things usually passed off as Italian foods almost all of them are on the brink of insulting if not ridiculous. And I mean it's insulting to food and insulting to people who eat it.For example this is a real Parmigiana (it's written with an I):

It's like a lasagna made with fried eggplants. It's called like this because it's used Parmigiano, the Parmesan cheese. Chicken Parmigiana doesn't exist.

Also pizza's dough has to rise for 72 hour or the yeast will react with your gastric juices and finish the fermentation in your stomach. The food industry will start to change only if the demand of healthier foods will increase.

Yes, in my family we make our own oil and wine too, here in middle Italy it's still pretty common. We make our own pasta only for the Sunday big lunch because italian home-made pasta is with eggs and you certainly can't eat it everyday. Also my father likes to search for mushrooms as a hobby and we have a nice reserve.

That dish looks quite different to the ready made frozen version Parmigiana sounds similar to the Greek dish moussaka - but maybe without meat?

And you make your own wine, olive oil and pasta! That's great

Exactly, it's made from layers of fried eggplants slices, tomato sauce and mozzarella pieces, all topped with Parmesan and put in the oven until the cheese makes a gold crust.
Perhaps they're called "Parmagiana" just because the chicken is seasoned with cheese and tomatoes like the eggplants?
And you should see the faces of American tourists when they discover that Fettuccini Alfredo don't exist.

A memory has just come back to me... I'm fairly sure an Italian student made this for me when I was in college - I remember her salting the eggplant to take out the water. It looks great anyway.

Here's a good example of someone on too many meds (including oxycodone). I hope he can turn things around

Maybe I'll post a follow up video to see how he's getting along.

Update. He's had a month on raw food and now takes 3 pills instead of 25. He no longer has diabetes, gout, acid reflux, depression, high blood pressure, and has lost 33lbs. All through diet and exercise. The power of good food, and how we can get off the pills.

Your life sounds like a movie.

Plus now I'm hungry.

Welcome to the club, I'm always hungry.
And if you're thinking about "Under the Tuscan sun", know that it's totally out. Italian life is more like "Three men and a leg" (I recommend you see this movie).

I feel like I'm derailing this thread but...

Hungry no more. After being on a very strict diet
for a doctors visit I ate well today.

Six Tacos
A few barbecue ribs
One Krispy Kreme chocolate glazed doughnut
.

And that movie is not available on Netflix or Amazon.

Btw, I did see Under The Tuscan Sun.

Too bad, I guess it's too old to find in english on Amazon. You can substitute with any other movie by Aldo, Giovanni & Giacomo.

I'm marveled by the quantity of proteins you can stuff in yourself. I couldn't do it, my intestines would rebel against me.

However to stay more on topic, there's currently a feud in my home. My father has a little bit of proteinuria (or stomatitis?), and he laments that he feels tired because of it. These last few months we reduced the meat on our table and ate more legumes, fish and above all seitan instead. Now since he doesn't like seitan he started to lament that it's our fault we never cook meat for him, like it's the only source of proteins. The funny thing is he doesn't even like meat, he'd eat only pasta most of the time. Usually If I/we don't say anything he'd eat a double serving of pasta, and then a derisory quantity of meat and vegetables with lots of bread to "swallow the bitter pill" and a quarter of an apple. Since when we've reduced the meat on our diet he has lost a few pounds and his blood test have been perfect, although I have to say he never had too much issues with that apart from a bit of cholesterol.
Today we cooked hambugers, now I want to see how much he will keep on bugging everyone until his next check-up.
