Tonight I am making Pepperoni & Stilton Stuffed Mushrooms.

It's so simple and delicious -

You just get some large open cap mushrooms, pop in a blob of Stilton or any cheese you like, top with Pepperoni or Parma Ham, and put them on a baking tray. In the tray add some baby tomatoes on the vine, sprinkle chopped red and green chillies over everything along with some finely sliced garlic. Finally drizzle olive oil over it all and pop it in the oven.

You definitely need some crusty bread or garlic bread to dunk in all those delicious juices!

It always turns out right, there's not really anything to go wrong with this one

And (for Homer) the more chillies the bigger the kick!

I don't really have the time to eat dinner tonight, so I see a packet of Trebor Soft Mints in my future.

Can you say OBSESSIVE?

I usually have about 35 plants, but they didn't do very well last year, so I figured I'd double my efforts this year. Several years ago, I got my two aunts to teach me how to "can" tomatoes. And I usually can about 35 quarts every summer.

Why does one guy need so many tomatoes, you ask?

Salsa. Love me some salsa. Every day of the year. Homemade salsa.

DAMN that sounds delicious!!! Especially the Stilton and pepperoni!!!! I wish Stilton weren't so expensive!

I'm still battling about 5 lbs that I've put on, so I'm TRYING to get back to my salad only days(being in a relationship now, has killed my obsessiveness with being thin).

Today's menu- I'm going to sautee some morel mushrooms that I have frozen, and have a spinach salad.

I've heard from many gardeners around the country that last year was just a bad year for tomatoes. I did three plants last year which is usually plenty, and I doubled them just like you this year.

When I was a kid my parents did a lot of canning; tomatoes peaches, pears, berry jams... Home-canned tomatoes taste the best - and someday I'll be doing it myself when I have the room to grow a few more dozen plants. This year, I've got two Ace, one purple Cherokee, one Lemon Boy, one Green Zebra and a Mr. Stripey.

Let the 5 lbs go and enjoy yourself. Life is too short to struggle over 5 lbs!!!

How awesome that you use your tomatoes all year- I wish I had the time (energy?) to grow vegetables. Maybe next year.

An older client I have been working with for a while now brought me a plate of homemade deviled eggs today! She knew my teeth (braces) were killing me and remembered that I loved eggs. Omg they are so good! I can accept gifts like that!

Trader Joe's marinara over penne pasta with a liberal smattering of Kraft grated parmesean.

Yeah, but 5 could easily become 15. Or more.

Back when I lived in town, I started with 4 tomato plants. I never really loved tomatoes, until I grew my own. OMG, they are so much better than anything you can buy at the store! Then I bought a place in the country,....and lookout! I've converted two flower beds, into tomato beds!!!! Because nothing is prettier, than a bunch of ripe tomatoes, hanging there!

Canning IS a pain in the ass, though. I will admit that. It takes me about a 3 hour evening, to can one 12 quart batch. BUT, I just wait until I'm off one evening, with no plans, and just watch TV from the kitchen, until I'm finished.

Never having had braces, I'm curious about the pain. Is it the worst at first, then gradually subsides, as the teeth "give" to the pressure? How often do they "crank you down" again?

The initial pain centered around the brackets cutting into the inside of my mouth/lips. I basically spent the first few days with wax covering each tooth. It was so attractive! At this point, the issue is kind of two-fold. My teeth hurt, because they are moving. But the way my bite is, when I try to bite down normally, my top teeth are encountering a bracket on the bottom left side which makes it really awkward. I'm scared to try and chew anything substantial because of this. Eating is SUCH a hassle. After I eat anything, I have a ten minute ordeal of brushing, cleaning, etc. It's just not worth it. So, I have lost 3 lbs in one week. Maybe I'm on to something here!

And to answer your last question, I am to go in every 8 weeks for tightening/new wires/torture.

Sounds like the excuse I'd need, to have a big milkshake for every meal! Or some creamy soups.

I sort of made my own braces..... When I was two, I fell down a flight of stairs, and knocked out my two front teeth. So I had no front teeth until my adult teeth came in. As a result(the dentist said, from pushing my tongue through that gap), I had pretty bad "buck teeth", when my adult teeth came in. Well, in 5th grade, I started playing trumpet....it wasn't until about 7-8th grade, that we noticed that my buck teeth were disappearing! The pressure of playing trumpet, had gradually pushed them back into place. And I played until my freshman year in college. My teeth are pretty straight since then.

I'd be PIGGING out, that week before you go back in!!!!

Did you know that for you blokes tomatoes are a great natural defence against prostate cancer? So keep up that intake

I had this same thought. They work better when cooked.

Last night I had Barilla whole grain pasta with Newman's Own Sockarooni sauce and veggie loose sausage. This is a new dish I tried in the vein of eating healthier versions of things I already like and are simple to make. This one is a winner for me. I served it with Romano.

Well, I guess 8 months of the year(when they're not fresh), they are cooked, since the canned jars spent an hour in boiling water, sealing them.
