Baked chicken (legs n thighs) coated with Progresso Italian bread crumbs, rice pilaf and steamed garlic infused zucchini. If you put the garlic in the steaming water it flavors the zucchini...yums. And before serving, hit the zucchini with a pinch of flake salt and pepper.

Plain Chicken fillet burger with chips, peri-peri salt and a bottomless drink.

Went out for dinner yesterday and had -

Scallops on a bed of warm salad & bacon (the scallops were cooked to just the right consistency - succulent and tender).

Pan fried Sea Bass on a bed of crushed potatoes and spinach, with a prawn and lobster sauce.

Cheeseboard which included local Lancashire cheeses as well as Blue Stilton and Blacksticks Blue.

It was scrumptious - I am still full up this morning!!!

Since it's starting to get cold outside, I'm dubbing one day a week, "Screw The Diet Day".

I'm having breaded stuffed chicken cutlet, eggplant Parmesan, and fried green tomatoes!

Well, you just have to do this when the winter sets in!

I intend on having TWO "Screw The Diet Days" per week, if not THREE!!!

I know. And my weight is holding pretty steady(147), so let's bring on some winter comfort foods!!! (although I leave for a week of vacation/eating out on Wed morning, so I'm going to try be really good today and tomorrow, to offset the over-indulgences my stomach and liver will be experiencing!)

I have work to do, so it's a quick lettuce and barbecue sauce sandwich for me, lol.

Have a fab time!

I think that a lot of winter comfort foods are really quite healthy - especially things like homemade vegetable soup, and casseroles. It's the actual amount you shovel down that has to be watched!

Thanks, of course I'm only going to my home away from home, Nashvegas! Even if I get my next planned trip there to happen(Christmas Day-New Years Eve), I wasn't able to topple my record number of weeks per year there(7 separate vacations there, in 2010). This will only be my 5th time there this year. I just had too much work this year, to be able to get away(two days off, just doesn't cut it for me....if I can't have at least 4-5 days there, it's just not enough).

I agree with the portions! THAT'S the problem, it's hard to make just one serving of meatloaf, or chili, or gumbo, or beef stew. Actually, I have managed to make a tiny meatloaf before, where there were just about two good pieces. Damn that makes me hungry, just thinking about it drownding in a sea of ketchup!!!!

I'm so jealous of this. I will go to Nashville within the next copuple of years! I'll have to have a proper chat with you before I do though. As you know, it will likely be my next destination when I make another trip to the US.

As for food... I had garlic prawns with flaked chili and rice. Delicious!

Thanks. Nashville is just the most fun place I've ever been. I mean, I love live music, so that's a huge reason why. Down on Lower Broadway and 2nd Ave, in about a 6 block area, there are probably 40 clubs that have bands playing, WITH NO COVER CHARGE!

And the people there are so friendly. I've been going for 20 years now, and I've made friendships there, that will last a lifetime. Many of the locals THINK I live there, because they see me so often! People there always say, "why don't you just get it over with, and move here?" It's on my agenda, in a couple of years.....

I sauteed a fish fillet with some chorizo(yes, very strange combination, I'm trying to clean out my freezer), with eggplant Parmesan, and a spinach salad.

Well, you know we have this in common so sounds great to me. Ahhh. I have an agenda involving a move too in the next 18 months or so.... it could be somewhere pretty far from here and I'll be sure to keep you posted.

Please do. I'm financially tied to my current life, for 2 more years. Long story short, I'll have my house and rental properties all paid off in 2 years, so I'll be ~financially independent~ then. If I don't want to work any more, I won't have to. I've worked SO hard at making this early retirement possible, that I refuse to come off of my game plan. Plus, 2 years will fly by....

Wow - quite a plan! Go for it. What's happening with me is that I finished the phD last last year and was completely broke and so just needed some full time work after years of part time work to start paying the bills and looki9ng for lectureships.. I got a School Administrators job that I'm really enjoying but have given myself two years there. Year 1 (which is almost finished - eek!) was to just enjoy having money and relax for a while while trying to get some stuff published and year 2... the job hunt is ON! Highly likel;y I'll be moving internationally since academia in the UK is worse than anywhere else. The US is a very strong possibility. If I haven't found anything in 18 months time I'm just moving - so I don't get stuck in the job I'm doing now since it's not what I trained and spent years working for.

Ok.. I've rambled on a little more than is normal for the "dinner" thread!
