I think I've said this before - or something similar, at least - on the board, but the reason I feel that Stevie says Joe Walsh is the love of her life is for the same reason Dani put forward: emotional distance. Nobody wants to look as though they're still enamoured with their ex-boyfriend while he's in another relationship. It makes them feel vulnerable and desparate. However, I think Stevie thinks that if she keeps saying she loved Joe Walsh the most that Lindsey might get jealous, despite being married with children. After all, one of the main goals for both them still is to score points of one another.
However, I think that Lindsey, like the rest of us, thinks Stevie doth protest too much.
