Check whether 'Quote message in reply?' is checked or not. That I believe is the issue you're seeing - it may have gotten checked by accident.
Also under Edit Options in the User Control Panel, there is both Standard Editor and Basic Editor to be found when it comes to customizing Message Editor Interface options (though this doesn't appear to be directly related to that).

Thanks for that, although the weird thing is that the "Quote message in reply" box isn't ticked and no amount of clicking on it changes it to ticked or unticked. I've tried changing various settings without success. It is weird and annoying, but never mind, I'll survive! Thanks for the help though!
