The guitar loop used for Bootylicious is slower than the one used for the opening of Edge Of 17 (which I assume is the part they've taken it from?) and is also a whole tone lower in pitch. Either it was re-played in the studio, or else they've just messed around with the speed and pitch of the original recording.

More to the point, those "ahh uh"'s you're hearing aren't Stevie...they're Beyonce. Those Michael Jackson-esque "hiccups" were added onto the remix version (and might feature on the "Survivor" album but I don't own it so I don't know), which I actually prefer to the original radio version.
