I've heard that tall grass is referring to...er...well...pubic hair.
So "lay me down in the tall grass & let me do my stuff" could mean "would you just shut the hell up, lay down & let me bang you." In theory. If it's true. Which it may or may not be. I don't know.
Or maybe LB is just a nature lover & wants to get down on the ground in a grassy field & look for wildlife.
