Here's my famous sweet potato casserole recipe:
2 lbs. mashed sweet potatoes
1 cup sugar
1 cup milk
4 tsp. cinnamon
nutmeg and ginger to taste
4 eggs
1 1/2 sticks margarine, melted
Mix ingredients - bake in greased casserole for 20 min. at 350.
Add topping:
1/2 cup brown sugar
1 cup crushed corn flakes
1 - 8 oz. can crushed pineapple
4 Tbls. margarine, melted
1/2 cup chopped pecans
Bake an additional 10 minutes
If it appears a bit jiggly when you take it out of the oven, don't worry, it will thicken up after a few minutes. I make this every year and it always gets rave reviews!  |
That sounds really good. I can put a line of marshmallows around the edge, right? yeah?
Since I'm just staying home for TG, I'm actually tempted to try and cook the awesome recipes people have posted.
