Well, I can't sing so that kind of cancels that one out. But I do play keyboards!
So...If I were in a band I think the funnest Mac song to reconstruct would be "Coming Home." That could easily be turned into an epic, psychedelic masterpiece in the right hands, and the same goes for "Brown Eyes" even though that one wouldn't need all that much work besides some major dynamic changes.
As far as just rocking out the crowd I think "Angel" (Stevie's Angel) would be a fun one to play. I love playing simple songs where you can just bash out stupid chords on the piano.
"Sisters Of The Moon" would also be a fun, killer rocker, and it would be fun turning "Prove Your Love" into a pompous, overdone prog-rock ballad.
