Based on what Ken & Lindsey said during the Rumours 5.1 interviews, it was pretty much about "how much sound you can fit into a 2 speaker (stereo) mix and still have the song not feel crowded." I think the 5.1 and all those extra chanels allow them to open up the mix and turn up vocals and intruments that were either burried deep in the stereo mix -- or just bring in takes and tracks that werent used becuase there just wasnt room in the mix for them.
