Immediately after that comment, that's when we cut to John saying, "It got ugly, physically ugly." He then makes the strangling gesture at his neck. To me, that's not him saying that Lindsey choked Stevie. It could be, but due to the sequence, I just don't think it is. I think John is referencing the way Stevie attacked Lindsey.

Lindsey then proceeded to chase her, got her out to the car and pinned her, hit her, made her think she was about to be murdered, maybe tried to strangle her. I don't know, but I don't think John's gesture was directed at whatever he did. Not given the sequence of the documentary.

I agree. I thought John was referring to Stevie concerning that particular fight. Seems I remember Stevie describing the incident in a more recent interview where she made the same gesture and was referring to herself as the attacker.
