I wonder how they felt about Eli Wallach, who if I'm not mistaken is Hungarian/Jewish having a prominent role in part 3? I guess they figured James Caan was in part 1 so what the hell.

The Godfather Part III is a fine movie. Its just that the first two were incredible and this is where it suffers. As for Pacino being 100% Sicilian, well he was born in the Bronx so I don't think that counts (despite his father being Sicilian and his mother Italian).
Eli Wallach in my opinion was the best actor in Part III. He gave a great performance as Don Altobello and it was a very fine and fitting ending for him in the movie. I still think of him as Tuco in "The Good, The Bad And The Ugly" though.. (The Godfather II and Good, Bad & Ugly are two of my favorite films behind Casino)
Robert Duvall was supposed to reprise his role as Tom Hagan in Part III but an arguement with Coppola over money and credits made sure he was history. Most of his characters lines went to Connie, Michael's sister.
A lot of the movie is based around true events although the story is a little more colourful with artistic license, unlike Scorcese's "Casino" which is very much the same as the real events.
There were plans for a fourth movie with Andy Garcia and Di Caprio but thankfully it all fell through..
