Soup

Damn, do I love soup. I really do. It's so tasty good and warm and comforting, especially this time of year. The only soups I don't like are cold soups - soup is not meant to be cold, IMO. One time I went to a coworker's house for dinner & she gave us soup that supposedly had mango & other fruits in it. It literally tasted like vomit, it was all I could do not to throw up on her table. I politely said "Oh, it's just not for me" and supressed the urge to gag. Oh, and I'm not a big fan of tomato.

I love creamy soups (mushroom is best.) Broccoli cheese & beer cheese soup are good too. For brothy soups, I prefer chicken or turkey over beef. And I don't like soup with ground beef floating around in it - little steak chunks are one thing, but wet ground beef is yuck. French onion is good as long as there's lots of melted cheese. Ooooh! And my favorite local restaurant makes Buffalo Chicken Wing soup - so good! And this one Chinese restaurant (it's really good, authentic Chinese food, not that fast-food buffet crap I usually eat) makes a phenomenal egg drop soup using only the whites.

I make a kickass split pea with ham soup, usually in Spring with the leftover Easter ham. I really should make soup more often. As far as canned, I used to love Campbell's chicken noodle or cream of mushroom as a kid, but they're too blah for me now. Progresso's great in a pinch, I take that for lunch a lot.

Thoughts on soup? For or against?

JazmenFlowers 02-20-2006 04:13 PM

love soup. love it. cream of chicken is my favorite. or cheese and broccoli.

quick, easy and delicious recipe.

brown chicken breasts (about 2), throw in a can of cream of mushroom soup...cook til it's warm. throw over a pan of rice (already cooked of course) and top with slivered almonds. bake for about 15 mins or until cooked through. It is divine. In fact, I may eat it for dinner tonight (I start NutriSystem later this week so I'd better enjoy it while I can).

amber 02-20-2006 04:27 PM

I like soup a lot, but not as many kinds as you. Stew is good, too.
Progresso is my favorite brand of soup. I like lentils, vegetable, minestrone, vegetable chicken, vegetable chicken with rice, vegetable beef sometimes, and once in awhile split pea. I like Miso soup, too. I don't love cream soups, or mushroomy, or soup with cheese in it. Clam Chowder the white kind is good, but I almost never eat it. I would never want chunks of ground beef in my soup, either.
Omigosh, remember campells bean with bacon soup?! Oh, I loved that when I was a kid! It's really strong and fake tasting. I wonder if they still have it? I never buy Campbells now, it's way gross compared to Progresso.

JazmenFlowers 02-20-2006 04:43 PM

I try not to eat too much soup (the canned kind at least)...way too much sodium.

It does have a lot. But I don't think salt is the monster it's made out to be.
However - soup is a massively awesome diet control tool. I should make more soup. Then I could also put sea salt instead of regular.

MoonChilde 02-20-2006 04:49 PM

I love soups too...but I really dont eat much canned ones...I find them way to greasy...I do love to make my own or try something really different..I had this soup once with squash and crab...ohh it was soooo good...

Hey, I always make brown mushroom chicken...but never with almonds.

My mom makes a great split pea with ham too...but she does it weekly:laugh: Too bad I'm not a kid anymore...damn! that was some great cooking!!! When you make it, You should get a french baquette...reheat in the oven in tin foil and butter it...and dip it in the soup...omg...heaven:rolleyes:

I'm definitely not into soup. I haven't been into it ever since I was a kid. I never eat it unless I'm over at someone's house and they've served it for dinner. I don't mind it so much if it has a lot of good stuff in it but I don't like when it's just broth.

I'm having a "soup revival". I used to really be into soups, but kind of lost my soup-ness about 10 years ago. But, recently, I've rediscovered the "joy of soups". I refuse to credit Donovan McNabb's mom's commercials for it, but damn if those didn't have a SMALL hand in triggering my re-interest in soup.

And, yeah, with my controlled hypertension, the sodium IS a major concern.

I've just discovered "Italian Wedding Soup"...spinach, meatballs & the mini-macaroni in a chicken broth. (I've had both Campbell's & Progresso...both are great). Very light, yet filling. Speaking of "Miso", it's kind of an "Italian Miso" (I also love Miso...the more chopped green onions the better!)

And, yep, I do like my namesake...chili. Any kind, mild, hot, with beans, no beans, beef, steak, chicken, meatless, it's all good. Especially with loads of cheese & onions! ;)

Susan (my beautiful wife) makes THE BEST Vegetable Beef soup in the world! (I'm biased, sure, but nonetheless...) The most theraputic soup ever...I'll take it over ANY kosher chicken soup.

Hubby doesn't really like soup much, which annoys me if that's what I want to make for dinner. He'll eat it, but then bitch that he'll be hungry in an hour. If its really thick, he's OK.

Amby - I LOVE New England (white) clam chowder - sooooooo good! I'll eat Manhatten (red) in a pinch, but I much prefer NE.

That place I mentioned with the chicken wing soup (which is chunks of chicken in a creamy chicken broth with celery, carrots, hot sauce and...blue cheese  ) is called Danny's, they have 4 different kinds of homemade soup in their soup & salad bar every day. The only one that's there every day is the chicken wing, and they usually have a clam on Fridays. The had a chicken cordon bleu soup once - to die for.

Campbell's select has some really good stuff.

Me too, I think mine is to do with cutting back financially on unimportant stuff. ( Gas in the UK has just gone up 44%, electricity 20%, and now the local government tax is going up 5%!!!! I'm not kidding, it's soooo expensive living here)

Minestrone, Vegetable and Beef Broth are my soups of choice right now...

When I eventually get my ass over there I'll have to try it :) Followed by several beverages no doubt......

amber 02-20-2006 05:22 PM

I always find it strange yet alluring how Italian food often mixes way too many kinds of meat together. The other day I was watching some show, or reading something, Italian cooking, and it was like...."wrap the meatball filled turkey with prosciutto...then wrap that in salami...top with mozzarella...sprinkle a little parmesan..."
(chili's Italian soup with meatballs in chicken broth reminded me of that).
I love Chili, too. All kinds.
I've never tried manhattan clam chowdah.

^^^ you just reminded me...

I don't know who all likes tofu (and sorry this is off-topic) but I got a new brand of barbecue tofu this weekend that is out of this world. I can't remember the brandname...smart something. The texture and flavor is perfect. Anyway, I know how hard it is to find good tofu products so if you're interested PM me and I'll give you the brandname later tonight.

Eh - you probably won't like it as much as the NE, but maybe.

I LOVE chili! I got a chili cookbook in the mail (from Marlboro, of all things. Nobody tell them I quit 5 years ago, or else they'll stop sending me crap!) I've tried a few from that book, one had honey in it (interesting) and one had Jack Daniel's, jalapenos & cream cheese - that one was fantastic.

Funny side note - my mom always put elbow macaroni in her chili, so i assumed everyone put pasta in their chili until I grew up & moved out. Boy, was I annoyed that nobody made it that way. Except Cincinati (sp) chili, which is a little different than hers, but still delish! Also, I prefer a thick chili to a soupy one.

estranged4life 02-20-2006 05:45 PM

Soup...Chili...

like 'em during the cold weather season, Especially with crushed saltines.

Sugar 02-20-2006 07:43 PM

When I started tinkering around with Japanese cooking, miso soup was one of the first things I made. I now make a wonderful pork and potato miso soup with bunches of veggies.

I also just discovered a pork and shrimp soup made with egg noodles and thai fish sauce in chicken broth. I made it now two weeks in a row because it's simply delicious.

A creamy tomato recipe is another fav and I also always make split pea after a ham.

Can't do canned soup anymore. YUCK! except sometimes one of those Soup at Hand ones for a quick lunch at work. But ONLY the tomato ones.

And I have two of the Marlboro cookbooks, too. The photos are beautiful, and I have had some good results from the recipes.

The historic explanation is that Italian cuisine has been originated by many poor dishes and since only few people could afford decent quantities of one kind of meat (especially beef), we became creative mixing them.

The other reason is that if you mix meats, for example, in ragu or meatballs (polpette), they become tastier.

I despise soup. It is just too hot!

goldie 02-20-2006 09:43 PM

Soup is awesome. Homemade soup is best! I get violently ill (really!) from canned soups with MSG in them. So I only go for the all natural organic canned soups. (Wolfgang Puck makes some pretty good organic soups). Or I just make my own chicken noodle soup.

sara1998 02-20-2006 09:44 PM

I'm not a soup kinda girl. I like it on occasion. My faves are cream of mushroom, cream of broccoli, and NE clam chowder. The little guy that works in the cafe at work just made some wonderful cream of broccoli. I had to have some, and then, I loved it so much, I had to buy seconds to bring home. Sara got to it before I did. :( I also love chili. My dad's is what I'm used to. He just puts onion, ground beef, chili seasoning, tomato's and kidney beans. So boring. I have to bring some peppers and cheese to make it tasty.

Thanks for the info. I agree tastier. My grandma puts meatballs and pepperoni chunks in her rigatoni. Same with Lasagna - none of those fancy vegetables in it! But if you think about it, probably lots of cultures were too poor for meat at all, or all one kind - and yet - Italians do it biggest and best.
EXPLAIN THAT, FRANCESCA!!!

Also - Sugar reminded me of another super delish soup that I just tried for the first time a year or so ago - Thai seafood soup. It's so spicy in a really good way. I don't like oysters or shrimp much, but the scallops are great. I just take those other things out and leave the veggies and scallops - oh, the broth is to die for! DIE! it's kind of expensive though. For me, maybe not for a normal person.

I think that Wolfgang Puck soup (organic and not) is the best canned soup right now, even better than the Progresso. In general though, I am too cheap for canned soup - I would rather make a pot, and eat ten times as much, with a spoon, leaning over the stove.

I really like puree soups, especially carrot. The puree carrot soup has lots of possible variations: cream, or not, dill or ginger curry, veg. stock, or chicken.

I also like tomato vegetable soup, or a stew, like pasta fazool (sp?) which has beans and pasta.

Thai soups are amazing, but I have been too lazy to try to make one. I think the one I like in the restaurnts is the Tom Ka Gai.

My mother makes a great white bean soup, and a really yummy turkey soup with rice, and she uses a slow cooker for these.

amber 02-21-2006 01:15 AM

damn! I should whip out the ol' crockpot and make some soup. /\ I have no idea what kind of Thai soup that is. I didn't know there were so many soups.

I think Wolfgang Puck's soup is terrible. I couldn't decide if it was the flavor mixes he uses, which aren't regular, or what. But after I tried it 3 times I couldn't risk finding out the answer anymore. :( I don't think I have a very adventurous soup pallette.

HomerMcvie 02-21-2006 01:42 AM

I've been on a BIG soup kick this whole winter, mostly making my own, the past couple months. Clam Chowder(NE), Cream of Broccoli, and Gumbo, mostly...
I'm too good of a cook!:(

I should have pointed out that I haven't tried all of the WP soups, and I bet the ones I tried had meat in them, so I compared them to Progresso with meat (chix) and I thought his were much better. I didn't try any weird ones. You would have tried the veg ones, right? I just tried some Amy's soups from the New Leaf, and they were great, but needed salt, and were pricey.
The Thai soup I mentioned is a lime coconut soup, sometimes with Chicken, but I think it can be without as well.

skcin 02-21-2006 10:29 AM

I really should make soup from scratch more. Like Amber said, dump everything into the crock pot & let it cook all day. I do make what I call semi-homemade soups sometimes (canned broth, add fresh or frozen ingredients) but not often enough. I think I'll make some soup this weekend. And I'll be making vegetarian chili when my brother & his wife come to visit in 2 weeks, that's always good. :)
