I'm a carb girl all the way. A big bowl of pasta or mashed potatoes. When I used to eat meat, my husband would make fried chicken, rice, and gravy and I would eat it until I felt nauseated. :)

There was a "post a recipe" type thread recently and someone posted one for a mashed potato/cheese concoction that made me want to weep with joy.

Edit:
Here it is:

On my husbands side of the family, I'm required to bring mashed potatoe dish.
Boil your potatoes, when done, add 2 pkgs. cream cheese, 2 cups sour cream and a stick of butter. Mix it all together, put in pan, drizzle a lilttle more butter over top. Bake 40 minutes at 350 covered. Take foil off and bake another 20 minutes. Add shredded cheese towards the end. They are really good, but I'm sick to death of making them.

I remember that! I am so going to make that one of these days...

My comfort food these days seems to be pints of Ben and Jerry's, usually chocolate chip cookie dough. Back when I was a meat eater one of my faves were breaded, fried chicken cutlets, mashed potatoes with lots of butter, plain boiled baby carrots, and applesauce. That particular plate of food, evokes an awful lot of good comfy memories for me.

I seem to recall beef stew too, but usually it only was heartwarming to me on the first night my mom made it. Any night thereafter I found it less satisfying- possibly because the flour-based gravy thickened up some.
