As a general rule, I hate covers. But the following are quite good:
"All Along the Watchtower" Jimi Hendrix (original by Bob Dylan)
"Sweet Dreams" Marilyn Manson (original by Eurythmics) Actually I really like most of his covers, like "Personal Jesus" and "Tainted Love"
"Reconsider Me" Stevie Nicks   (original by Warren Zevon)
"Feel A Whole Lot Better" Tom Petty (original by The Byrds)
"Knockin' On Heaven's Door" Guns 'n' Roses (original by Bob Dylan)
"C'est la Vie (You Never Can Tell)" Bob Seger (original by Chuck Berry)
"Where Have All the Flowers Gone?" The Kingston Trio (original by Peter, Paul and Mary)
that's all I can think of at the moment.

"Love Minus Zero/No Limit"---Fleetwood Mac
"With A Little Help From My Friends"---Joe Cocker
"Come Together"---Aerosmith
"Taxman"---Stevie Ray Vaughan
"Live & Let Die" (Paul McCartney)--GnR
Move It On Over" (Hank Williams)---George Thorogood
"One Bourbon, One Scotch, One Beer" (John Lee Hooker)---George Thorogood
"After Midnight" (JJ Cale)---Eric Clapton
"Don't Bring Me Down" (The Animals)---Tom Petty & The Heartbreakers
"I Shot The Sheriff" (Bob Marley)---Eric Clapton
"Stand By Me" (Ben E. King)---John Lennon
"Big Yellow Taxi" (Joni Mitchell)---Lindsey Buckingham
Excellent list.
As for someone's comment about judging Big Yellow Taxi from a 30 second snippet, that's really all you need to discern whether a song is good or not.
"While My Guitar Gently Weeps"---Prince w/the Traveling Wilburys (from the George Harrison Rock & Roll Hall Of Fame induction ceremony)
That one was pretty good, but nothing moves me like the Clapton/McCartney version from Concert for George.
(as mentioned below) "Knockin' On Heaven's Door"---Eric Clapton
I agree that Clapton did a great job on this one, but GNR's version just seemed somehow more memorable. Maybe it's just because I grew up with GNR. My mom used to be a big fan.
On another note, Warren Zevon did perhaps the most poignant version of this song for his final album, The Wind.

I gotta add Siouxsie & The Banshees covers of Dylan's 'This Wheel's On Fire', and Billie Holiday's 'Strange Fruit', complete with her Billie's funeral requiem. Also, her cover of Iggy Pop's 'The Passenger' is delightfully fun.

:Oh, ChiliD, you forgot one:
Here Comes The Sun (Beatles) ---Lindsey Buckingham
No, I didn't...that was an INTENTIONAL omission...due to it not meeting the qualifications of "Great Beatle Cover"...now if I'd titled the list, WORST Beatle covers, it would be right atop the list followed closely by Kris Kristofferson's (note the spelling of his name with "K"s) version of "Paperback Writer".

I love the new record. I don't understand how you can call it overproduced in comparison to their previous three albums, though. "beautifulgarbage" and "Version 2.0" were so slick that putting them in water would cause an ecological disaster to rival that of the Exxon Valdez.

oh my gawd what an awesome song this is...
I also MUST add Tori Amos' cover of Can't Get You Out of My Head - the way that woman played and sang this song completely changed how I think and feel about it - it's so much darker in a fragile kind of way - Love.

I love the Stones new version of "Like a Rolling Stone: (Bob Dylan)
- So appropriate, don't ya think?? Only took them 30+ years to cover it
I also really like -

*I need a lover- Pat Benatar- (John "Cougar Mellancamp),
although I love his version better!
*Sympathy for the Devil-10,00 Maniacs (Rolling Stones)
*Sweet Jane- Cowboy Junkies (Lor Reed)
although I love Lou Reed's live version the bestest!!
*Delta Dawn -Bette Midler (Tanya Tucker, i think?)
*Angel from Montgomery -Bonnie Rait (John Prine)
All I can think of right now  -
but I am loving the Stones version of "Like A Rolling Stone"-
Gotta love Mick on harmonica
My all time favorite cover is John Lennon's version of Be My Baby. It's other-wordly greatness.

Battle of Evermore by The Lovemongers/The Wilson Sisters (Led Zep)
How Soon is Now by Love Spit Love (The Smiths)

Black Hole Sun by Steve Lawrence and Eydie Gorme (Soundgarden)
Witchcraft by Edwin Collins
Wichita Lineman by the Texas Tornadoes with Michelle Shocked and Glen Campbell (Glen Campbell) OK, so Glen sings one verse on this; I still consider it a cover.

Garbage do a great cover of Vic Chestnut's Kick My Ass. It's actually my favorite song Garbage does 'cause her lyrics suck so much!
What about that great cover you turned me onto, "Rocketman" by Kate Bush.

You know, I'm normally a little iffy on the Sundays' cover of Wild Horses. I used to love it, but it got so played out. Then again, I just bawled like a little bitch watching the Buffy prom episode... and the Buffy and the protector speech and the Angel and the tuxedos and the dancing and the Sundays!- tear tear saliva, etc. So I'm keeping it on my list.
Favorite covers-
Wild Horses (Stones)- The Sundays
Real Love (Mary J. Blige)- Twilight Singers
River (Joni Mitchell)- Heart
Two of Us (Beatles)- Aimee Mann & Michael Penn
Maybe I'm Amazed (Wings)- Jem (shut up. sentimental.)
I Found A Reason (Velvet Underground)- Cat Power
Sweet Jane (Lou Reed)- Cowboy Junkies
Thunder Road (Bruce Springsteen)- Counting Crows (I don't know if it really counts, since they stick it in the middle of another song, but it rules nonetheless)
A Satisfied Mind (whoever!)- Jeff Buckley
Train From Kansas City (Shangri-Las)- Neko Case
Beat on the Brat (Ramones)- U2
Book of Love (Magnetic Fields)- Peter Gabriel
Circle of Fire (June)- Social Distortion
Handbags and Gladrags- Stereophonics
and the entire soundtrack of covers by Seu Jorge of Bowie songs from The Life Aquatic. I loved Seu Jorge and was THRILLED when I saw him in The Life Aquatic, let alone singing Bowie songs... especially Life on Mars.

Damn, I wished I'd remember that for my list. I can't hear that song without adding my own '****in's to it.

Another two great covers I've recently discovered are "White Rabbit" and "Could You Be Loved" both performed by Shakespear's Sister.

But no one can touch Marie. That woman has an amazing voice-very suitable for pop music but still very good.
Very, very true.... an artist would be hard-pressed to match her job on "It Must've Been Love", 'cause she just totally blows me away on that one.
