My friend was supposed to have a big Mexican dinner/cards night, last night. But due to terrible weather here this weekend(ice storm), he canceled, "before everyone spent their money on food for the party"

Sadly, I'd already bought everything.

So I called my family, and I'm cooking for a bunch of them today. It's a mexican chicken casserole. I got the recipe off the Food Network site, and it's a Paula Deen recipe. Hope it's good!

It was only so so. I wouldn't recommend it. Firstly, it called for 3 cans of soup(cream of chicken, cream of mushroom, and cheddar cheese soup), and while it was okay, the consensus was, that it just tasted too processed. IF IF IF I were to do it again, I'd maybe ONLY use the cream of chicken soup, and make up the difference with natural ingredients, such as green chilies, and maybe some salsa or something.

Your first mistake was looking to Paula Deen for good Mexican food. If you want good Mexican food, you should try this recipe for a start:

It doesn't hurt that the recipe is from director, Robert Rodriguez.

I wasn't specifically looking for Paula Deen, just searching the food network's database, for Mexican recipes. I SHOULD have known, that any recipe calling for 3!!! cans of soup, as a base, couldn't be very authentic. My bad.

Going to have a small ham steak(actually going to cut one in half, and just eat half), with some mashed potatoes, and some baby peas.

Trying to knock out a few more winter comfort foods off my list, before spring...

Mmmm!! Homemade potato wedges and lentils in tomato and pepper sauce, I'm loving this new vegetarian diet.

And I just had a bloody delicious desert, crunchy peanut butter on chocolate covered digestive biscuits.

I really do find it amazing, the difference between the Brits and Americans. Because I used to think we had much more in common. But there are all sorts of things they have/do, that we've never even heard of.

I haven't eaten yet today, so having an early dinner. Carrot, Herb and Egg Noodle stir fry, followed by a Pear, Redcurrant, Raspberry and Sultana salad with Almond dressing.
