My friend was supposed to have a big Mexican dinner/cards night, last night. But due to terrible weather here this weekend(ice storm), he canceled, "before everyone spent their money on food for the party"
Sadly, I'd already bought everything. So I called my family, and I'm cooking for a bunch of them today. It's a mexican chicken casserole. I got the recipe off the Food Network site, and it's a Paula Deen recipe. Hope it's good! http://www.foodnetwork.com/recipes/p...ipe/index.html |

It was only so so. I wouldn't recommend it. Firstly, it called for 3 cans of soup(cream of chicken, cream of mushroom, and cheddar cheese soup), and while it was okay, the consensus was, that it just tasted too processed. IF IF IF I were to do it again, I'd maybe ONLY use the cream of chicken soup, and make up the difference with natural ingredients, such as green chilies, and maybe some salsa or something.

Going to have a small ham steak(actually going to cut one in half, and just eat half), with some mashed potatoes, and some baby peas.

Mmmm!! Homemade potato wedges and lentils in tomato and pepper sauce, I'm loving this new vegetarian diet.
And I just had a bloody delicious desert, crunchy peanut butter on chocolate covered digestive biscuits.

I haven't eaten yet today, so having an early dinner. Carrot, Herb and Egg Noodle stir fry, followed by a Pear, Redcurrant, Raspberry and Sultana salad with Almond dressing.
